If you go to Gawande's source, the table notes:

1900
41 percent of workforce employed in agriculture

This number appears to be derived from Series D 1-10 from this volume

http://www2.census.gov/prod2/statcomp/documents/CT1970p1-05.pdf

which reports that in 1900 11,050,000 people were employed on farms out of 26,956 ,000 total employed.

This is somewhere between the two estimates.
