You had crony capitalism then (investment banks were family affairs) food was less safe see Upton Sinclairs the Jungle and other muckrakers of the time. They all sound a lot like china today, a wild west free capitalist kind of society with folks like Jay Gould and other stock manipulators, the packing houses, old fashion food handling i.e. pull your crackers from the cracker barrel with your bare hands ... The fact that China shot a few folks for the melamine in milk scandal will get others attention, (the chinese not being as "civilized" as the us about it the scandal) Trying to judge a society at an earlier point of development with a later point of development is not right. Recall at the time (1890) smoke stacks going full blast were seen as signs of progress. As society got people demanded that some of the economic gain be devoted to safety in food, air etc.
