Lyle, I don't think the author was suggesting that all regulations on stoves and cooking be removed. Rather, just that they be simple and reasonable, and probably not require a "team [team!] of engineers, contractors, and expediters." I think if it's too complex for one engineer who is knowledgeable about oven, then it is probably too complex. We're talking about an oven, which people have been building for most of human history and generally not killing themselves with, not an aircraft carrier.
